Unlike tow straps where you would let all the slack out before pulling, recovery straps contain much more "give" allowing the driver to get a running start. This is much more effective in a recovery situation for a couple of reasons. The first is that the vehicle doing the pulling can get momentum as well as traction.

Both straps and chains have their own strengths and weaknesses when it comes to pulling and towing. Chains are generally considered stronger than straps in terms of their tensile strength and resistance to abrasion and cutting. They are less likely to break under heavy loads or sharp edges compared to straps.

Tow straps work just fine as long as you don't drive like an idiot (ie like someone with a snatch strap). Pull steady and controlled and you'll be fine. I pulled like 15 cars out during the snow here in TX last month with no issues.
